One-Pot High-Protein Baked Pasta (Chickpea Paste)

Instructions

Preheat oven to 375°F (190°C). In a large oven-safe pot or deep baking dish, add pasta, chickpea paste, broth, crushed tomatoes, tomato paste, onion, garlic, oil, and all seasonings. Stir well until everything is evenly combined and pasta is mostly submerged. Cover tightly with foil and bake for 25 minutes. Remove foil, stir, and sprinkle cheese on top. Bake uncovered for 10 more minutes, until bubbly and lightly golden. Rest 5 minutes before serving. Garnish if desired.

Notes

Chickpea paste adds plant protein, fiber, and creaminess without meat. For thinner sauce, add ¼ cup extra broth. Use gluten-free pasta if needed (add ¼ cup more liquid).
